Bread casserole (thermomix or not)
For a long time I had not made ​​homemade bread and yet I love it. I had never tried the casserole bread is a bread baked in a closed oven casserole. One can use any pot provided it firm and it goes in the oven. 
The bread is golden and crisp. The only small problem is the need to adapt the cooking time in the pan and the oven that we have. 
I made ​​a simple bread with T55 flour but you can use any type of flour, add some seeds.

500 g flour 
300 ml water 
1 teaspoon salt 
20 g of fresh yeast or 2 dehydrated yeast bags (I use the Briochin yeast)
In Thermomix : 
Pour warm water into the bowl, crumble the yeast in and rotate 37 ° for 3 minutes speed 2. 
Then add 500g of flour, salt and run for 5 minutes depending trouble. 
Remove the dough the bowl, put it in a bowl to form a ball, cover with a clean cloth and let rise one or two hours (it must have doubled or tripled in size) the dough is sticky when taken out of the bowl is normal. 
Degas the dough strongly pushing the fist in it. Flour the work surface, roll out the dough and then fold it into quarters. The return and form a ball. 
Grease the bottom and sides of the pot, possibly put a sheet of parchment paper on the bottom and put the ball in the casserole. Close the pressure cooker. Let rise for 1 hour. 
Wet hands and rub the bread with his hands. Flour the top and make cuts with a sharp knife or razor blade. 
Place the pan in the cold oven and raise the temperature to 235 °. Bake the bread for 35 to 40 minutes without opening the lid. 
Be careful when you open the lid, steam burning out. 
Wait for it to cool before cutting or wrapping.
without thermomix : 
Mix warm water and yeast and let stand 10 minutes. 
Add flour and salt and knead for 15 minutes.

verdict: good bread with a golden crust and very crisp. I used the fresh yeast (which I do not like to do because I think we feel much taste the yeast in the bread) but this time the yeast taste remains discreet. 
The bread may stick at the bottom of the pan, grease or protect the bottom with parchment paper. 
Please note, the bread tends to expand, do not use too much or you will have a casserole dish any bread.
